PBJ French Toast

A cross between a peanut butter and jelly sandwich and French toast, this treat is perfect for snack time, brunch or lunch.

Makes 4 servings

Ingredients
8 slices sandwich bread
6 tablespoons peanut butter
1/2 cup jam or jelly
4 large eggs
3 tablespoons butter

Directions

  1. Spread peanut butter on 4 slices of bread.
  2. Spread jam or jelly on 4 slices of bread.
  3. Top each peanut butter slice with a jelly slice, making 4 peanut butter and jelly sandwiches.
  4. In a large, shallow bowl, beat the eggs.
  5. In a large nonstick skillet, melt half the butter over medium-low heat.
  6. Dip both sides of two sandwiches into the eggs.
  7. Transfer the sandwiches to a skillet and cook them until golden, about 4 minutes. Carefully turn them and cook until golden, about 3 minutes.
  8. Transfer sandwiches to a plate and cover to keep warm.
  9. Repeat with remaining butter, sandwiches and eggs.
  10. Cut sandwiches in half and serve.
