Ingredients:
2 – 11 oz. cans of Mexi-Corn, drained
1 – 4 oz. can diced green chiles, drained
4 green onions, finely chopped
8 oz. of cream cheese, softened (room temperature)
8 oz. sour cream
1 – 1 oz. package of ranch dip powder
1 jalapeno, seeded and diced
Method:
1) Drain all of the canned items (corn and chiles).
2) Mix the corn and chiles with the remaining ingredients well and refrigerate for one hour before serving.
Delicious with corn chips and/or wheat crackers.
